Matured for 11 years in a combination of former Sherry and Bourbon casks, it has a wonderfully rich aroma of toffee and butterscotch with hints of apples and honey. There are flavours of dark chocolate, winter spice and poached fruits on the palate which leaves a warming suggestion of Christmas pudding. The smoke influence is gentle and well balanced throughout
